You can add different toppings to make this a special breakfast. This recipe is made with all-purpose einkorn flour. You will be proud to serve this elegant breakfast to guest.
Most of the time grind einkorn flour and soak it overnight but sometimes you need a fast breakfast, so this is when we use all-purpose einkorn flour. We can hardly tell the difference between an Einkorn German Pancake and a German Pancake made with white flour.
What equipment you need to make an Einkorn German Pancake
- Cast-iron skillet (we use the number 9 size skillet)
- Blender (stick blender will work as well)

- 1 cup Einkorn All-Purpose Flour
- 1 cup milk
- 4 eggs
- 1/2 – 1 teaspoon vanilla
- a pinch of salt
- 4 tablespoons of butter (half stick)
Tips for making an Einkorn German Pancake
- Using a blender makes the batter smooth and fluffy
- Preheat your iron skillet in a 425 degree oven
- When you add the butter make sure and watch it carefully to avoid burning
- Try to avoid opening the oven during baking.
Directions
- Preheat your oven with the skillet inside at 425 degrees.
- In a blender add 4 eggs, 1 cup of milk, 1 cup all-purpose Einkorn flour, a pinch of salt, and 1/2 – 1 teaspoon of vanilla.
- Blend until smooth.
- Remove skillet from oven.
- Add 4 tablespoons of butter and put back into the oven to melt.
- When the butter is melted pour in the pancake batter and return to the oven.
- Bake 18 minutes.
Ideas for serving (A blank slate to embellish)
- I like to sprinkle powdered sugar over the pancake and serve with lemon wedges and maple syrup
- You can top with your favorite jam.
- Make a sauce with berries such as blueberry, strawberry, or blackberry.
- Top with apple sauce. When my kids were little I did this lots.
- Serve as a side dish with fruit and yogurt.
