This recipe for WHOLE GRAIN EINKORN sourdough waffles is so easy that you will never buy store-bought waffles again. Sourdough starter is fed with whole grain einkorn flour then long-fermented which makes it a gut-healthy choice. You can keep the jar of sourdough discard/starter ready to go in the refrigerator to use anytime. So no worries about soaking your waffle ingredients the night before.
Sourdough Starter vs. Sourdough Discard
Basically they are the same.
- Sourdough Starter is starter fed with flour to make active when you are preparing to make bread that you want to rise (leaven). It has a bell-shaped curve life-it rises to an active peak then starts to descend in activity. When you make bread you want to mix your dough at the sourdough starter’s peak or shortly after. After the fall, the sourdough starter is now called discard. But actually it is very fermented and healthy which makes it great to use in a number of recipes.
- Sourdough Discard is sourdough starter that has gone through the fermentation process that peaked in activity then began descending in activity due to the microbes converting the starches into lactic acid. This means a more gut-friendly food for you because the microbes did some of the work for you (predigesting). It really isn’t discard at all and actually I prefer to use it and keep a big jar of it ready to go for quick food. Well, I guess technically I feed my sourdough discard because I never have any discard from bread baking.

I keep a jar in the refrigerator so any time I want to make waffles I am ready to go without waiting. This jar of sourdough discard is fed with freshly ground whole grains. I love whole grains and this is an easy way to incorporate whole grains into our diet.
Einkorn is one of our favorite grains and is works perfectly in this recipe for waffles.
How I feed My Jar of Sourdough Discard
I add some water then add enough einkorn flour to achieve the right consistency about like a brownie batter. Remember you will be adding eggs to this so keep it a little thicker. The amount you make is of course dependent on how many waffles you want to make. If I feed the starter (discard) in the evening then I will leave it on the counter until morning. But mostly I feed the jar, leave it out the rest of the day then put it in the refrigerator before bedtime. There it waits until I am ready to use it. Also, I change grains all the time by just adding the different flour to the jar. I definitely don’t clean it or start over. The left behind sourdough discard acts as a starter.

- Butter-we use butter from our jersey cows

Directions
In the morning mix:
1 cup sourdough discard fed with whole grain einkorn flour
1 egg
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon butter
1/4 teaspoon of vanilla is optional
Put waffle batter in your waffle maker, cook, then serve waffles with butter and maple syrup.
Easy!
We get about 3-4 waffles per recipe. So if you want more waffles then double, triple, quadruple, etc. the recipe.
Perfect for spur of the minute breakfast guest, just keep lots of sourdough discard ready all the time!
