Granola is an easy breakfast recipe
All families need a quick breakfast. I suppose that is why cold breakfast cereals are so popular but what if you family doesn’t eat boxed cereals like ours. Our recipe for granola is a great staple to keep in your larder because in minutes your children have a healthy option for breakfast. They can even make their own breakfast safely if needed. There are so many options to use with granola.
Ingredients
First of all let me say this, you can add or subtract ingredients to fit what your family likes!
The only thing to remember is to use 8 cups of ingredients – one stick of butter – 1/2 cup of honey! Easy for every cup of dry ingredients use 1 tablespoon of butter and 1 tablespoon of honey. If you want more butter or coconut oil, more sweetener-then add more.
You most definitely can replace the butter with another fat such as coconut oil and you have so many options to use to sweeten granola such as maple syrup, date syrup, molasses, or sorghum. Sucanat is an option. Just please don’t use refined sugar.
Remember not to add dried fruit or chocolate until after the granola is baked.
How to Make Crunchy Granola
Our secret is to cook the granola low and slow. This ensures even drying and browning to prevent moist burned granola. Just think how you love crispy crackers, achieved by cooking at a low temperature for a longer time to remove moisture without burning. Remember to spread the granola in a thin layer on the cookie sheet so every bit will be crunchy. After the granola is completely cool then store in a canning jar. If your granola needs reviving then toast in a 350 degree oven until desired brownness.
Ingredients for Healthy Honey Granola
Dry Ingredients:
- 4 cups Rolled Oats
- 1/2 cup Sunflower Seeds
- 2 cups Coconut
- 1 cup Nuts such as-almonds, pecans, walnuts
- 1/2 cup Pumpkin Seeds
Wet Ingredients:
- 1/2 cup Butter or Coconut Oil
- 1/2 cup Honey or Date Syrup or Maple Syrup
- 2 teaspoons Cinnamon
- 2 teaspoons Ginger (ground)
- 1/2 teaspoon Nutmeg
- 1/2 teaspoon Salt
- 1-2 teaspoons Vanilla
Additions to cooked granola:
- Dried Cranberries are our favorite.
- Any dried fruit such as cherries – sometimes we add dried figs from our fig tree.
- Chocolate Chips

Instructions for Making Healthy Honey Granola
- Fill a quart size measuring cup (4 cups) with rolled oats and pour into a large bowl.
- Add to the measuring cup any combination of coconut, pumpkin seeds, sunflower seeds, or nuts. Pour into bowl with dry ingredients.
- Stir to combine ingredients.
- In a pan melt 1/2 cup (1 stick) butter or coconut oil.
- Add 1/2 cup of honey or sweetener of your choice.
- 2 teaspoons of cinnamon and 2 teaspoons of ground ginger and 1/2 teaspoon nutmeg- add to the melted butter
- 1/2 teaspoon salt – we use Redmond’s – add to the melted butter
- Add: 1-2 teaspoons of vanilla
- Pour pan of melted butter, honey, spices, salt, and vanilla over the dry ingredients and mix until everything is coated with the butter/honey mixture. You can watch our YouTube video to see how I do this.
- Spread granola in a thin even layer on two parchment lined cookie sheets.
- Bake at 250 degrees for 75 minutes.
- Cool Completely, then store in a canning jar or air tight container
